Gluten Free Apple Bundt Cake

Do you have that friend that everything they make is incredible? Never a recipe that is a flop (or none that I have tried). I mean they have good taste in good taste! Insert Kate into my life, she is married to one of my husband’s best friends and has known my husband longer than I have. Kate is a true foodie! She picks the best eats to dine at and the best dishes to recreate in her kitchen. Admittedly the following recipe I cannot take credit for, this is all Kate’s doing, I have simply made into a gluten free recipe. And let me tell you, it is a crowd pleaser. Bring to book club night, everybody wants the recipe. Bring to share at bunco, everybody wants the recipe. You get the picture. This is officially my go to dessert recipe and it will be yours too! Gluten Free Apple Bundt Cake

  • 2 Cups Sugar
  • 1/2 Cup Butter
  • 2 Eggs
  • 2 tsp Vanilla Extract
  • 2 Cups Gluten Free Flour (I love it best using Cup4Cup GF flour)
  • 1 1/2 tsp Baking Soda
  • 2 tsp Ground Cinnamon
  • 1/2 tsp Ground Nutmeg
  • 4 Cups Chopped Apples (with skins on) (I used Gala apples.)
  • 1/2 Cup Chopped Walnuts

Sauce:

  • 1/2 Cup Brown Sugar
  • 1/2 Cup White Sugar
  • 1/2 Cup Butter
  • 1/2 Cup Half & Half
  1. Preheat oven to 350 degrees.  Cream together sugar and butter in a large bowl (I love to use my Kitchen Aid mixer).  Add eggs and vanilla and beat until combined.  Add all dry ingredients, one cup of flour at a time.  Beat until combined.  The batter will seem dry, almost like a cookie dough.  Add the chopped apples and nuts, beating on medium speed.  It is perfectly okay if some of the apples get a bit beaten up. Pour the batter into a greased bundt pan.  When baking gluten free the batter may have more of a globby consistency, which is normal.  Bake for 45-50 minutes.

Sauce

  1. While stirring, melt butter, both sugars, and half & half in a saucepan.  Bring to a boil and then remove from heat.  Pour over the cake when serving.  Enjoy!
