Gluten Free Pumpkin Donuts

 

 

 

So here’s the deal… I love me a good donut!  And I look around at stores and see only frozen gluten free donuts and I scroll through Instagram and see yummy sugared donuts this time of year, all gluten filled of course.  But what I want is a big fat, warm out of the oven gluten free donut.  Anyone else with me????  So I went to work recreating a gluten free pumpkin donut.  These things are sinful and by the time I have chowed down on Halloween candy all month and then polished these babies off, I have difficulty buttoning my pants.  Yikes…all in moderation, right?  I love these donuts warmed up and with a cup of joe.  Enjoy!

Gluten Free Pumpkin Donuts

Ingredients
  1. 1 large egg
  2. 1/4 cup canola oil
  3. 1 1/2 cup pumpkin puree
  4. 2 1/2 cups all purpose gluten free flour
  5. 2 teaspoon baking powder
  6. 1 teaspoon baking soda
  7. 1 1/2 teaspoon ground cinnamon
  8. 1 teaspoon ground ginger
  9. 1/2 teaspoon ground nutmeg
  10. 1/2 teaspoon ground cloves
  11. 1/2 teaspoon salt
  12. 1 3/4 cup packed brown sugar (I prefer dark brown sugar, but either is fine)
For an optional glaze
  1. 2 tablespoons unsalted butter
  2. 1/4 cup of pure maple syrup
  3. 1 cup confectioners' sugar
  4. If you choose to dust the donuts with sugar..
  5. 2 tablespoon to 1/4 cup of sugar
  6. 2 tablespoons of butter.
Instructions
  1. Preheat the oven to 350 and the donut pans with cooking spray. Whisk together the dry ingredients in a bowl and set aside. In a separate bowl (I love using my Kitchen Aid stand mixer) mix together the egg, oil, and puree. When mixed, slowly add the dry ingredients to blend.
  2. Next, take an icing bag, and scoop the batter into the bag. To make this easier, I put the bag into a tall cup and fold the the bag over the rim so I can easily scoop the batter in. When the bag is full, cut a small part of the end of the bag off. Pipe the batter into the donut pan. Do not fill to the top of each donut portion. Bake for 10 to 12 minutes and let cool. Makes about 2 dozen.
  3. I like to add a maple glaze to about half of the donuts and sugar to the other half.
  4. To make the glaze, heat the butter and maple syrup in a pan on low heat. When melted, remove from heat and slowly whisk in the powdered sugar. Drizzle onto cooled donuts. Heavenly!
  5. Melt the butter and brush onto the donuts. Sprinkle sugar to coat each donut.
Notes
  1. I enjoy the donuts warmed up with a cup of coffee! Enjoy!
