Sausage and Cheese Waffles

 

 

 

When I eliminated gluten from my diet, I found myself craving good old gluten filled comfort food.  So I began my quest to recreate our family favorite meals.  Top of the list were my Sausage & Cheese Waffles.  They are heavenly!  My family requests these waffles regularly.   Just because I was gluten free, I did not want to say goodbye to these.  I cannot promise that they are calorie free, but they are worth the splurge, trust me!  These will not disappoint!

 

                

 

 

 

1 ½ cups gluten free flour blend

1 teaspoon baking powder

¼ teaspoon baking soda

1 ¾ cups buttermilk

4 tablespoons melted butter

2 large eggs

2 cups shredded cheddar cheese

½ pound fully cooked pork sausage

Preheat a nonstick waffle iron to medium high.  Note:  I love my four square All Clad Belgian Waffle Maker.  I had no idea there was a difference between waffle irons until our original waffle iron went kaput and I splurged and purchased the All Clad waffle iron.

In a large bowl mix the dry ingredients… the flour, baking powder, and baking soda.  Next, beat the buttermilk, butter, and eggs.  Stir into the dry ingredients.  It will be globby looking.  Here is the deal…gluten free dough and mixtures simply do not appear the same as gluten filled dough and mixtures.  But do not worry!  You will not taste a difference or see a difference in texture after they are baked.

Stir in the cheese and sausage.  Spoon the batter into the waffle iron and spread evenly.  Cook until they are golden and crispy.

 

A couple of tips… use a high quality gluten free flour blend.  I use my own blend that I make at

home or I use Cup 4 Cup (one of my favs).  Also, I cook up a full pound of sausage and double t

he recipe.  They will get eaten quickly!  These waffles are perfect for breakfast… or lunch… or dinner.  Really, they are pretty fantastic at any meal!

How to eat them?  My husband simply likes a pat of butter on his Sausage & Cheese Waffles.

My boys and I love the combination of savory and sweet with maple syrup poured over a stack of waffles.  Often I cut the waffles in to strips for our boys to dunk into syrup, which they love.  These

waffles are perfect to throw into the freezer and pull out on a busy morning before school.  But to be honest, if these are even in our house, they do not last long.  Enjoy!
