Do you have one of those tried and true recipes? Today, I am sharing mine. Chicken Salsa is one of our family’s favorite meals and it is super easy. It is a go to gluten free meal. Perfect for large crowds, perfect for throwing in the freezer, perfect for adding to soups, quesadillas etc. Having guests over for dinner who are gluten free? This is a perfect meal to serve!
The bulk of Salsa Chicken only needs three ingredients; Chicken breasts, salsa, and taco seasoning.
- Simply combine about 1.5 to 2 pounds of boneless chicken breasts (I usually use 8 chicken breasts), one large jar of salsa, and one packet of gluten free taco seasoning, such as McCormick Gluten Free Taco Seasoning into a slow cooker.
- Cook on low for eight hours.
- Shred the chicken and assemble in either hard taco shells, gluten free corn taco shells, gf corn tortillas, or gluten free flour tortillas. My favorite gluten free tortillas are made by Udi’s. Udi’s gluten free tortillas are so soft and have a similar texture to a wheat flour tortilla. They can be purchased in the freezer section at your local grocery store or Target store. To heat, put a tortilla on a hot non-stick fry pan until it begins to bubble has browned to your liking.
Top with shredded cheese, lettuce, chopped tomatoes, avocado and/or any favorite taco toppings. Pineapple and red onions are a tasty combo!
