Slow Cooker Gluten Free Cheeseburger Soup

 

Magbo Eats: Slow Cooker Gluten Free Cheeseburger Soup

Cheeseburger Soup is probably my oldest son’s most requested meal, actually a close second to the request of an actual cheeseburger. Fairly simple, delicious, and hearty enough to feed my house of boys; it is a winner in my book.

2 lbs. ground beef, browned and drained 4 C. peeled and diced russet potatoes (5 medium potatoes) 4 T. (1/2 stick ) butter or margarine 2 tsp. each salt, pepper, and dried minced onion 1 tsp. dried basil flakes 2 T. cornstarch 2 C. milk 16 oz. Velveeta cheese, cubed 1 C. sour cream 32 oz. carton chicken broth

Boil diced potatoes until soft and can easily be cut by a fork, drain, and place in slow cooker. While potatoes are boiling, brown hamburger and drain, then add to slow cooker, Reduce heat to medium-low, then using the same skillet, melt the butter and salt, pepper, minced onion, and basil flakes. Stir constantly until minced onions are soft, about 2 minutes. Add half of the milk and stir. While continuing to stir, slowly add half of the cornstarch. Add the remaining milk and slowly add the remaining cornstarch until it is smooth. This will thicken and create a roux. Add half of the cheese, stir until mostly melted. Add remaining cheese and stir until all of the cheese is melted. Add sour cream, stirring until smooth. Pour mixture over potatoes and hamburger in the crockpot, then add the chicken broth and stir together. Cook on low for 2 hours.  Any soup is great served with crackers.  I love Schar’s buttery table crackers with the Cheeseburger Soup.
