A Gluten Free Cookie Decorating Party

The hustle and bustle of the holiday season is upon us!  Amongst the busyness, I love creating magical and special Christmas memories for my boys.  This usually includes a lot of time in the kitchen making cookies and other Christmas goodies.  My kitchen usually needs to be deep cleaned afterward, but the mess is worth the excitement and fun.  But let’s admit, if someone in your family has a food allergy or sensitivity it can complicate these normal holiday activities.  It can add bit more preparation and stress, and often those cookies might not taste quite the same as they should.  Today, I am sharing one of my favorite recipes for gluten free sugar cookie cut outs, a recipe that has been adapted from The Kitchn, using my own gluten free flour blend.  http://magbocollective.com/magbo-eats-gluten-free-flour-blend/

The best part is that you will never guess that they are gluten free!  In fact,  it is now my go-to sugar cookie recipe, perfect for a cookie decorating party!

  • The mini gable boxes are perfect to bring home cookies in our to deliver cookies to neighbors!  Using a glue gun, I decorated mine with ric rack, baker’s twine, & ribbon.  My boys had fun decorating theirs with Christmas themed wash tape that we found at Target.

  • Cookie Cutters

Frosting:

1 Cup Shortening

1 1/2 tsp. vanilla

1/2 tsp. almond extract

4 cups powdered sugar

3 Tbsp. milk

In a large bowl (I love to use my Kitchenmaid stand mixer), beat shortening, vanilla, and the almond extract on medium speed for 30 seconds.  Beating well, gradually add half of the powdered sugar and half of the milk.  Slowly beat in the remaining powdered sugar and milk until you have reached your desired consistency.  Add a small amount of more milk or powdered sugar if needed.  Want multiple frosting colors?  Divide frosting into several bowls and add several drops of food coloring of your desired color and blend.

 

Glaze:

1 Cup powdered sugar

1 Tbsp. light corn syrup

2 Tbsp. water.

Several, about 10 drops of food coloring if desired.  

Mix ingredients together in a medium sized bowl.  Paint on to the cookies with a new inexpensive paintbrush or spread on with a small dinner knife.

Ingredients
  1. 1 cup unsalted butter, softened at room temperature for 1 hour
  2. 2 ounces cream cheese, at room temperature
  3. 1 cup sugar
  4. 1 large egg
  5. 1 teaspoon pure vanilla extract
  6. 1/2 teaspoon almond extract
  7. 1 teaspoon lemon zest
  8. 3 cups Magbo Eats gluten free flour blend
  9. 1 1/2 teaspoons baking powder
  10. 1/2 teaspoon salt
Instructions
  1. With a mixer (I love to use my Kitchenaid stand mixer), cream the butter, cream cheese, and sugar and beat for several minutes until it is light and fluffy. Beat in the egg, vanilla and almond extracts, and lemon zest. In a separate bowl, mix the gf flour, salt, and baking powder. Slowly add the flour mixture to the butter/sugar mixture until it is fully blended. Divide dough into two balls and wrap in plastic wrap or a plastic zip bag. Refrigerate for at least on hour and then roll dough out to a 1/4" thickness. Cut dough with cookie cutters and place cookies onto a cookie sheet. Bake at 350 degrees for 8-12 minutes. As the Kitchn, recommends, cool for 5 minutes and then place on a cooling rack. Let cook before icing. Store the cookies in the freezer or in an airtight container.
